Grown under the tropical sun of the SAVA region, every pod carries a deep, sweet fragrance that has made Madagascar the world’s vanilla capital. At Comptoir Des Épices Madagascar, we grow and prepare our vanilla through our own cooperative, where 70%
of the farmers are women, guardians of ancestral know-how and nature’s rhythm.
Why Madagascar Bourbon Vanilla Is So Unique
Madagascar Bourbon Vanilla is prized for its intense aroma, high vanillin content, and rich, creamy notes that enhance both sweet and savoury creations.
Among the most precious forms of this spice lies the Vanilla Caviar the pure, black pulp extracted from inside the pod. It takes about 5 kg of vanilla beans to make 1 kg of caviar, all extracted by hand a symbol of patience, skill, and devotion.
Recipe: Silky Bourbon Vanilla Cream
A timeless dessert that celebrates the purity of Madagascar vanilla.
🍶 Ingredients (for 4–6 servings)
500 ml whole milk
200 ml cream
1 Madagascar Bourbon vanilla bean (or 1 tsp vanilla caviar)
4 egg yolks
80 g sugar
A pinch of salt
👩🍳 Method
1. Infuse the Heart of Vanilla
Split the vanilla bean lengthwise and scrape out the vanilla caviar those tiny black seeds known as the heart of the pod.Place both the pod and the seeds in a saucepan with the milk and cream.Gently heat (don’t boil) to infuse the mixture with the full fragrance of Madagascar.
2. Whisk the Cream Base
In a bowl, whisk together egg yolks, sugar, and salt until light and pale.Slowly pour in the warm vanilla milk while whisking continuously.
3. Cook Slowly
Return to the saucepan and cook over low heat, stirring constantly, until the cream thickens slightly and coats the back of a spoon.Do not let it boil patience is key.
4. Cool and Serve
Remove the vanilla pod, pour into serving cups, and chill for at least 2 hours.Before serving, sprinkle a few grains of vanilla caviar on top for a touch of luxury.
